Chef led · 25 years · New Jersey and the NYC metro
Two kitchens, one crew. Order a bowl for lunch, feed a hundred people on Saturday, or put the truck at your event. Catering and mobile food experiences across New Jersey and the NYC metro.
Two kitchens
Same crew, same standards, two very different plates. Tell us which one you came for and we will take you straight there.
Barbacoa Bowls
Four choices and you are done. The bowl on the right updates as you go, so you know exactly what you are getting and what it costs before you order.
Big Papa Smoke'm
Smoked overnight, sliced to order. Platters and crew packages feed anything from a job site to a whole floor of an office.
Baked beans · mac and cheese · cornbread · slaw · greens · rice · fries · garlic sofrito yucca
Catering & mobile vending
Corporate lunches, warehouses, universities, churches, festivals and celebrations. Fill this in once and we can quote it without a phone call first.
Truck schedule
Public stops across North Jersey and into the city. Pick a day and you get the lot, the service window and directions.

Chef Mario Chape
Two concepts, one kitchen crew. Barbacoa Bowls came from the street food Mario grew up on. Big Papa Smoke'm came from the smoker he could not stop building on. Both run on the same idea, which is that nobody should leave hungry and nobody should be treated like a transaction.
Food brings people together. Setting a table is a form of service and ministry.
